Please excuse me for not knowing the technical term... but I prefer two handed, crimping with one and palming with the other with a gentle roll outward to my fingertips in a back and forth kind of motion.

The stuff at Vetri in KoP is good. Standard 12" round pies and a longer thin crust. Only had the round but good char (or whatever its called), holds shape when held etc.

The stuff at Bocconcini was very not good. Dough was floppy with bad color. Looked store bought. Toppings were eh.

second time i had it. its great. and the slices are pretty hearty.

he is opening a shop somewhere soon i believe. or at least starting the process. the pop ups are done for a while as he travels for the next month.
