I think my problem is that because I've never been there I don't know what to do - what towns to go to, how to get there, where to park, what to do once there, etc. So I feel like if I went there I'd waste a day wandering aimlessly, not seeing or doing much, and probably getting my car towed or something.
I need a guide.

Summer weekends can be hellishly crowded, so I'd avoid that. Weekdays are much better. Parking is much less an issue for one.
September after Labor Day is ideal--few crowds and the water is still warm, though beaches may not have life guards and so swimming might not be the wisest thing you can do.
All you really need for a day at the beach is some food and rink, sunscreen, a swimsuit, and a towel. I always bring something to read and I like to sit in a beach chair. Frisbees, footballs, boogie boards and so forth are optional equipment.
I'd say the best way to go if feasible is stay in a nice B&B in Cape May in September. Great restaurants, decent beach, the B&Bs often have beach equipment you can borrow, and there's non-beach stuff to do. Alternatively, there's Wildwood--for a family, I'd recommend North Wildwood, rather than Wildwood itself. If you're staying in one of the motels, they have parking available. Beach towns definitely have different vibes, so a bit of research is in order.

If you did a 3-day trip, like check-in on Monday afternoon, leave Thursday morning, that would be more than enough time to do everything there while avoiding all the weekend crowds (and prices)
