That is quite the healthy and nutritious dinner. That said, how do you make a Kandy Kake?

Had ring bologna for lunch so I sensed a need to balance that with something healthy.

My real recipes are either still in PA or packed in boxes here somewhere. Anyway, I winged it with the following ratio of ingredients.

1 cup flour
1 cup sugar
2 eggs
1/2 cup milk
1 teaspoon baking powder
1 teaspoon vanilla
Peanut butter
Chocolate

Sift flour and baking powder together. Heat milk until boiling. Beat the eggs, add sugar and then add vanilla. Slowly mix hot milk into the egg mixture then mix in flour and baking powder. Bake at about 350.

After it cools spread peanut butter on top. Cover with melted chocolate and cool until hardened. I usually do a layer of chocolate top and bottom but it's not really necessary.

I'll bring you a piece when I finally invite you to lunch like I've been meaning to do since I moved here.

Sounds great! Not for nothin' but my birthday is on Friday. That seems like a good time to eat lunch and have cake.

If you're making it cake size I think I'd cover it with a chocolate ganache instead of just melted chocolate. Ganache is eminently more forkable.

I am super restless today. I don't know if it's in part to it being 2 weeks since my latest job interview (they said they'd get back in 1-2 weeks), because I actually got 6+ hours of sleep last night and want to be more active than sitting at my desk, or the phases of the moon; but, I cannot focus.

I'm waiting on a job offer and am entertaining the idea of just putting in my notice today, because f it. Live on the edge a little.

"working" from home but mostly painting my office. Took off tomorrow and Friday to get stuff done around the house, putting tile/panels on the ceiling in my office to cover wallpaper glue/cracked plaster and then putting transitions over the new terra cotta tiles in our entryway. Probably more wallpaper glue scrubbing/spackling in the hallway upstairs as a surprise for the wife.

Don't forget to factor in your already apparent desire to leave your current job.
