Had ring bologna for lunch so I sensed a need to balance that with something healthy.
My real recipes are either still in PA or packed in boxes here somewhere. Anyway, I winged it with the following ratio of ingredients.
1 cup flour
1 cup sugar
2 eggs
1/2 cup milk
1 teaspoon baking powder
1 teaspoon vanilla
Peanut butter
Chocolate
Sift flour and baking powder together. Heat milk until boiling. Beat the eggs, add sugar and then add vanilla. Slowly mix hot milk into the egg mixture then mix in flour and baking powder. Bake at about 350.
After it cools spread peanut butter on top. Cover with melted chocolate and cool until hardened. I usually do a layer of chocolate top and bottom but it's not really necessary.
I'll bring you a piece when I finally invite you to lunch like I've been meaning to do since I moved here.

Sounds great! Not for nothin' but my birthday is on Friday. That seems like a good time to eat lunch and have cake.
