There's no reason to need to have a catcher on the bench any more than there is a need to hold back a backup at any other position. In the exteremely unlikely event that your catcher gets hurt with the backup having already pinch hit, then you just put a guy like Brunlett or whomever back there and suck it up for one game (keep in mind that you are likely already losing said game if you are pinch hitting Coste). The small odds of that extreme case happening is not worth giving up a good tactical advantage on a regular basis.
The idea that your backup catcher cannot pinch hit is one of those stupid MLB traditions that doesn't make any sense.
