If you want to get off the interstate, you can get on US 79 after you cross the Mississippi. That route will take you into Round Rock, TX, a bit north of Austin. It won't take much longer, but you do need to watch your speed as you go through the small towns. You'll avoid some nasty traffic, especially around Dallas. And I-40 in AR is the pits--zillions of trucks, and nothing interesting to see.
If you're good with maps, there are a few short cuts that make this a bit more interesting. If you're on 79 in Magnolia, you'll make a right on US 82, stay on that for a mile or so, and then get on 371, and either go to I-20, switching back to US 79 just west of Shreveport, or take that to Sarepta, where you'll get on LA state highway 2 for a few miles, then get on LA-3 south to I 220 W, then I-20 west, and back on 79. If you do this, by the way, I don't know how well a GPS will work.
