One time on this board I was dismissive of the awesomeness of the cheesesteak. That was wrong. Though I would still put a good pizza and a good hoagie ahead of the cheesesteak, there is something awesome about the cheesesteak too. On reflection, the real puzzle of the cheesesteak is "why can't you get a decent cheesesteak outside of the Philly metro area?" I mean, you can get excellent pizza and hoagies (by any other name) in lots of other places. What is so special about the cheesesteak? And yet, within Philly, the variation of cheesesteak quality is less than the variation in pizza or hoagie quality. Now with hoagies and pizza, it's easy to see why quality would vary--if you use cheap meat on your sandwich, the sandwich will suffer. Pizza has variables in terms of sauce and crust, and places that make their own sauce and crust are going to be better than those that don't. But with the cheesesteak, the ingredients are I guess mostly pretty standard--Amoroso rolls, whiz, and I guess the meat is pretty much the same from place to place. So, one reason you might find an out of area cheesesteak lacking is the lack of access to the right beef and the right rolls.

But really, it's got to be about technique. And I guess how much meat they put on the sandwich.
