How do you do pancakes? I used to be able to find pancake mix where you added your own eggs and milk and stuff and they were pretty good. Now all I find are mixes where you just add water and it isn't nearly as good.

Do you have a scratch recipe or anything?

I kinda like pancakes once in a while. (Believe it or not pancakes with some spam and mustard on the side is somehow scrumdiddlyishous.).

I've never cared much for pancakes, but we got as a gift a mix that was all organic stuff including flax seed of all things that was actually quite good. Enjoyed that along with lingonberry preserves from Costco and some powdered sugar. The only things added to this mix were water and oil.

1.5 cups flour
3.5 tsp baking powder
.5 tsp salt
1.25 cups milk
1 egg
3 tsp melted butter
and the key: .5 tsp vanilla extract

don't over-mix, leave some lumps in the batter.
add fruit or chocolate chips if you're feeling crazy.
makes about 4 good sized pancakes, enough to feed 2.

it's just as easy to make your own batter as it is to buy from a box and probably half the cost.

That sounds great SK. Yeah, I concur. I haven't bought pancake mix in a couple of years. Think I'll try your recipe tomorrow AM. Pancakes with maple syrup. Probably some bacon on the side. (Spam is better but I'm in a bacon mood).
