I think with regular rice you have to boil it and let it stand for 10-15 minutes or more. Whereas with instant you just put some water in the bowl and microwave it and you're good. Both suck.

You jest, but good rices (there are lots of varieties) really have awesome flavor. These can sometimes stand on their own without any sauce.

Uncle Ben's or whatever has very little taste by comparison - it's a neutral starch to soak up whatever you're serving it with.

Instant cooks in 1/4 of the time. I know this doesn't matter if you have a family and are making the rice right with your proteins, but for people like me, who make enough protein for 3-4 meals at a time and just reheat them, instant rice is much more convenient than the real stuff.
