I presume you've actually had it? Not everyone likes it, but I think price, availability and ethical concerns (in that order) are bigger reasons than flavor that foie gras isn't eaten more in this country.

Well this would discourage me...recent research published in PNAS quoted in wikipedia

In June 2007, a research showed a possible link between foie gras and Amyloidosis-related disorders (including Creutzfeldt-Jakob Disease, type II diabetes and rheumatoid arthritis).[49] Transgenic mice with predisposition to amyloidosis were either fed or injected with amyloid protein extracted from commercial foie gras. Animals in both groups displayed "extensive systemic pathological (amyloid) deposits". After cooking the foie gras per manufacturer specification, mice injected with its extracted amyloid showed reduced but still noticeable effect. The authors conclude that exposure to serum amyloid A in foie gras is the likely cause, and suggest it could be a contributing factor of certain diseases in a susceptible population.

Let me see if I've got this right--it might not be a good idea to eat foie gras. However, the mice didn't necessarily eat foie fras, but it was injected into them. And it wasn't foie gras that was injected, but amyloid proteins extracted from foie gras. Any word on amounts? And what does a predisposition to amyloidosis related disorders mean?

I believe foie gras is banned, in of all places, chicago.

Basically, fattening a goose liver is done by force feeding a goose by putting a funnel down its throat and pouring corn down the gullet.

Well that's kind of how scientific research is done...you can't use the entirety of the liver mixture because of the number of compounds involved, you only want to test the impact of one, so you isolate it from the frois gras and measure the effect.

It's preliminary research, but since I wasn't a big fan before hand, just another reason to stay away from ti

Oh, I understand it's how scientific research is done. However, I also understand that there's an unscientific bias in science towards positive results--technically, finding no relationship is as important as finding one, but no one gets tenure by finding no relationship between variables.

I understand your point, but this was published in proceedings...the proceedings of the national academy of science, it's kind of a biggy if i recall correctly...i didn't read the whole paper, but i'm pretty sure it went through a tough peer review process before published
