No idea what a shrub is, so I googled it. Which one of these was it?

Second one. Equal parts apple cider vinegar and sugar. Add in fruit. Boil then simmer. Chill then add to the drink.

Was a way to preserve fruit back in the day. So you can basically do that with any fruit you want and get a flavored 'simple syrup' that lasts a very long time.

I've actually never tried one of the alcoholic seltzers because I can't stand seltzers generally... now I'm interested.
