Had Santucci's square pie for the first time last night. I though it was tomato pie, but there was a layer of mozzarella under the sauce. Tasted great room temperature and reheated. Now that's amore

The problem with cheese-under-the-sauce is that it get deprived of oven browning.

But it serves as a moisture barrier, keeping the crust from getting soggy, even with that sea of red sauce.

First pizzaiolo to solve that will be a hero.

I wonder if anyone tried putting half the cheese under, then half on top?

Capofitto - on Chestnut St in Old City - has Neapolitan pie as good as any in the region. Not getting the acclaim it merits. The first and only time I have accepted and enjoyed a wet center.

Not cheap, but worth it. Great flavor and texture and balance.

Anyone been to Snap Custom Pizza in Ardmore?

It's the Peace A Pizza dude. PAP is barely-better-than-average pie. He's opening one on Black Friday in Exton in the former PAP location there.

The chain MOD seems like the Chipotle of pizza - "build yer own" fast & cheap.

This one is in the Gateway Shopping Center just off 202 in Wayne.

Pizza was very good - but not awesome. Not as good as Wolfgang Puck chain or Rapidough's in WC.

Every pie is $7.87 no matter what you put on it.

NY Pizza Supremo is at 31st and 8th Ave, adjacent to Penn Station in NYC.

This was a fabulous upside down square slice with a killer sauce. Better than the legendary L&B Spumoni Gardens

The round pie is a B+
