Palazzo at the Venetian. Bellagio is still great too.
Consider New Orleans over Vegas. Food will be better and cheaper, and depending on your tastes, shows may be better and cheaper--the music scene is actually very diverse.
The Venetian/Palazzo is really a pretty great deal though--the rooms are pretty huge, and very affordable.
I thought about this, but we've done New Orleans before, spent a week at the ritz-carlton on bourbon street, not that we saw everything by any means, but we've never been to Vegas together. Then again, new Orleans is where I told my wife that I was going to marry her, so maybe I should think about that before I book something but Vegas is really kida calling out to me.
