They're most commonly pronounced "at-at" as in (c)at-(c)at, but neither is wrong. They're only referred to as "Imperial walkers" in ESB and not referenced at all in Rogue One. So nothing canonical (yet).

You can hit up good old Wookieepedia to get all the variants, both Imperial and other, including things from games, and shows. You know, your base model AT-AT, or super charged AT-OT, bi-pod AT-ST, etc. FWIW, the AT-TE was cool to build with my kid. Enjoy.
