I made this on the grill a few weeks ago. Stewed a bunch of roma tomatoes in a foil pan for about 30 mins in olive oil, garlic, shallots, and some italian spices. Brought the grill up to about 600 and put that shit on the crust with fresh basil, mozz, and feta. Grilled it for about 5 mins. So awesome.

I've gotta try that, I love shallots, been trying to use them in more things lately and never thought about putting feta on a pizza, but I bet it's great.

Did you put it on the smoking stone to cook st 600? I haven't tried a high temp cook yet, but pizza is going to be the first one I do most likely

I love shallots too. I used the Akron smoking stone in its usual spot and use a pizza stone on top of the grate. It may have been 550 degrees, not quite 600 but it cooked pretty fast. The feta goes well with the tomatoes and shallots. Probably going to do it again this weekend. Will take pics this time. But it's really easy on the kamado. Pizza was delicious. I impressed myself.

Tomorrow I'm the pronouncer for the school spelling bee. It's a lot of fun.
