Burritos fall apart (usually) because the tortilla is too hard.

I used to have Qdoba as a client and they talk about this all the time. One of the biggest differences between them and Chipotle is that Qdoba steams the tortilla while Chipotle puts it in that press thing. If the tortilla is left in there too long it will be less pliable and more likely to break apart.

It's a pretty noticeable difference once you're aware of it. I like Chipotle better. Qdoba's steamed tortillas almost make them feel undercooked. But they do hold a lot and don't break. So if your Qdoba burrito falls apart, the person rolling it just didn't give a shit.
