A good pho place should specialize in it, as in 2/3s or more of the patrons are eating it when you walk in. The key is the broth. The noodles and meat, you or I can buy from the store. If they overcook the noodles or serve low quality meat, that's one thing, but possibly correctable. If the broth is bad, that's a recipe flaw that can't ever be overcome.

Turnover should be fast, you don't want broth that has been simmering for too long. Water will have evaporated off and the proportion of spices won't be right.

Lastly, any decent place should be able to get you a bowl in front of you within 5 minutes of walking in. Any longer and they're just too slow to be very good.


coworker said that a good broth takes hours of simmering to get it right. what do you qauntify as 'too long?'


Hypothetically speaking, say a batch of broth serves 25 bowls. Ideally, the restaurant staggers their broth making and makes one batch for lunch and one for dinner. But if the restaurant doesn't even get 25 orders for it in a day, they might use their lunch broth for dinner too. By dinnertime, the broth is not nearly as good.

That's why you want a busy restaurant with high turnover. That and if its busy, its probably pretty good too.

The best place I've been in Philly is some place we call the Choo Choo train, because it has an illustration of a train on the window. Apparently, it's called Pho Xe Lua Veit Thai, and a Vietnamese friend gave me the initial rec. It's fits all of Lethal's criteria, too.

I also saw a place in Seattle called Pho King, which is pretty funny, especially cause pho is technically pronounced "fuh."

I've been to Choo Choo train (I guess everyone calls it that) a few times, most recently on Saturday, and I like it but I think the places down on Washington like Pho 75 and Cafe Diem are better. man, now I really want some pho. hate how there's none in Center City West

"Xe Lua" is the word for train (all Vietnamese words are monosyllabic). A large bowl with all the meats is commonly known by the Vietnamese slang To (word for bowl) Xe Lua at most places. If I go to a new place, I order that before I sit down and see how fast they can get it to me. I can look at a menu later if I need to.

Speaking of Center City West... I kinda wanna move there since I'm working in University City now. Will probably be asking for neighborhood and/or apartment complex recommendations eventually.

Cafe Diem is awesome, but I was only there once. Those Washington Ave joints are great, but I'm walking distance at work to the Choo Choo so I've been there way more frequently. But it's in Chinatown, so Dim Sum Garden and that Nan Zhou hand drawn noodle place also frequently draw me in on the way.

Cafe Saigon is a decent spot too if you're out by UPenn for some reason.

I remember an ex taking me out to someplace in the Northeast that was pretty decent from what I remember, but that was like 15 years ago.

edit: It's probably worth noting that Jenny Pho seemed to be pretty heavy with the MSG. Didn't bother me personally (in fact, my guess is that's why I liked it so much), but I had co-workers who wouldn't eat there because they were allergic or sensitive or whatever.

I'm about to go try Jenny Pho. Hopefully it's as good as you say it is. You haven't let me down yet when it comes to Seattle stuff.

Went there once only because me and a friend didn't realize Pho Thai Nam in Norristown was closed on Mondays and Le Saigon seemed to be the next closest Vietnamese place. I ended up getting the banh mi and really liked it, but my friend was not all that impressed with the pho. She always gets chicken pho, which doesn't really do anything for me anyway, so there's that.

Cool. Let me know what you think. When they first opened they gave everyone a free cream puff at the end of the meal. Can't say for sure if they still do that anymore, though.

they don't.

it was good. they used too much cilantro for my taste, but overall it was pretty good. i love those 2 little shopping centers back there in issaquah. great view of squak and tiger mountains.

yeah, the big costco building, right? the pho was good, i'm just not a big cilantro fan. it was the best pho i've ever had out of the 3 that i've had.

also noticed the one bar on 900 between issaquah and renton has $2 beers on monday nights. see me there.

Yeah, it was only my second Vietanmese experience, but it was much better than my first.

Dim Sum and Nan Zhou are both tits. I think I met friends at the Choo Choo once but never ate there. I work a block away so I guess that's happening tomorrow.
