Well, I'm not an expert, but the struggle for the four central squares is made exponentially more interesting by the king's pawn ability to get right in there and jumpstart the game. There'd be no concepts like preparing the advance of the queen's pawn or an unexpected late double move to grab control of a wing. Without it, I think we would just see fianchettos in almost every game and strictly defensive play by black.

I mean, try a game without the double move and see what happens. There just isn't much incentive to attack without it.

One of the more interesting things I found out over the past few weeks is that in quality games, both sides castle something like 95% of the time. I used to think of it as something of a novelty but now I'll gladly sacrifice a knight, and maybe a bishop if circumstances are right, if it means forcing the king to move and forfeiting the castle.

I mean, to want to move a pawn such that en passant was possible, you'd need such a unique setup where both the double move (in case your opponent declines) and losing your pawn a block up were beneficial to you. It's not very likely.
