A guy on my team just sent this to everybody:

All, I started sending this stuffing recipe (created about 25 years ago) to my teammates in 2007. It created quite the positive response. I stopped sending it out a few years ago.. But… by consensus and renewed popular demand here it is again.

Created by yours truly, I think it is simply the finest side dish stuffing recipe on the planet.
WORLD FAMOUS THANKSGIVING DAY STUFFING RECIPE
(quantities are approximate use your best judgment)

2-4 bags Stuffing Mix - Traditional, Cranberry, or to your liking
1-2 lbs Cooked sweet sausage - chopped fine ( or use beef flavored tofu or soy as a vegetarian substitute)
3-4 cups Partially cooked fresh cranberries
2-3 cups chopped mushrooms
2-3 cups chopped celery
2-3 cups diced apples
2 cup mini marshmallows
2 cups - chopped sweet peppers to your liking, red, yellow, green
1-2 cups chopped walnuts, or almonds or peanuts, your choice.
2-3 cups of diced small mozzarella chunks
1- 2 large chopped onions
4 cloves finely minced garlic
1/2 - 1 cup raisins (the baking raisins are the best )
1-2 cups chopped sun dried tomatoes ( i like the ones in oil the best)
1/2 cup of honey
1 quart of Apple juice
a healthy dash of Lemon-Pepper


1. precook sausage and chop fine

2. mix all ingredients, putting stuffing mix in LAST
carefully spoon into baking pan to a depth of about 2-3 inch high

3. slowly pour honey over top of mix in a zig-zag pattern.
4. Liberally sprinkle apple juice over top and bake about 40 minutes, with an aluminum foil cover, temp about 275

5. Keep sprinkling apple juice over top about every 15-20 min while baking to keep moist, (a spray bottle filled with apple juice does nicely)

Serve nice and hot! Probably serves 8-10 people but it depends on their appetites!
