I love smoking thighs. Do them a lot to make pulled chicken for tailgates and the beach.

I haven't smoked thighs before today, but when I took all the chicken off earlier, I wound up cutting up a thigh for my son to eat for dinner (I'm frying the rest after the kids go to bed) and it was amazing. I'll have to try making pulled chicken out of it, i've done it in the pressure cooker before, but that smoked flavor is the tits. What do you smoke it with? I did lump charcoal and pecan wood at about 300 degrees

I use apple or pecan or a mix with thighs around 300 for maybe 2 hours. I brine them a bit as well. When i take them off I use pull the meat in a bowl with 2 forks.

Nice, I personally like apple, but my wife thinks it's too strong so I've used pecan the last two times, and it's turned out well.

I like pecan but it can burn too hot sometimes. But I guess that's fine for chicken.
