overweight people can be healthy though; and the constant fat shaming can lead to other health complications. The key is getting someone to be the best version of them, not conforming to some ideal.

Problem I have is that we've swung so far in the other direction that you can't criticize or acknowledge that someone's fat. The girls who model for high end fashion stuff are usually underweight (and unattractive IMO) but that doesn't mean a chick who is 200 lbs is any healthier. No way we should glorify that or promote it as OK.

Stuff like extreme forms of body acceptance are basically ignoring millions of years of genetic programming. Fact is humans want to reproduce with healthy, attractive partners. For men that means good hip ratio, athletic, firm ass, etc. For women, it's a guy who is tall, athletic, defined face, etc. People can delude themselves into thinking otherwise and trying to change that, but it won't.
